In their present state, Eggplants are just the poor starver's Potatoes. Both crops provide the same stats and spoilage (when cooked, at least, but there's little reason to consume either of them raw), and they both consume the same nutrient. But Eggplants are more picky when it comes to seasons, while lacking Potatoes' powerful crock pot recipes. (In fact, the only recipe that explicitly requires Eggplants is virtually guaranteed to be a net loss of stats due to the crock pot's 4 ingredients requirement.)
So, naturally, I thought it should be buffed by the power of groan-worthy puns. Just like Corn Cod works as Corn in the crock pot, Eggplants should have an Egg value of 1.0, just like normal eggs do.
